Healthy Vegan Black Bean Brownie Recipe

At YOGASCAPES, we’re obsessed with delicious, healthy food that supports and inspires us. That’s why we were excited to meet Lina Bou and experience her Vegan Black Bean Brownie recipe, which she garnishes with Marshmallow flowers. It’s a protein-rich treat that makes eating an entire pan of brownies somehow feel a little bit closer to… dinner? Savor and enjoy!

Quantity : 9-12 brownies

Ingredients:
20 dates, preferably soaked five hours
250g cooked black beans (after draining)
2 tbsp cacao powder
40g coconut flakes
1/4 tsp salt
40g coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
140g chocolate chips
Baking form 8×8 cm
Food Processor
Optional: Edible flowers(Marshmallow flowers on the photo), extra chocolate chip for the top

Instructions:
Preheat the oven to 175°c. Take out the seeds in the soaked dates, and put them in a food processor and mix well. Add all the ingredients except the chocolate chips and blend until completely smooth. Stir in the chocolate chips in the preparation. Oil the baking form with some coconut oil and pour the mixture in it. Option: add some extra chocolate chips over the top. Cook 11-14 minutes, and then let cool before serving. When you take it out from the oven, it is normal if the texture still is very soft and a bit “undercooked”. The brownie will firm up magically when you let it cool and give it the creamy texture you want. Serve with some edible flowers.
